Check out the vibrant colors of this salad!  God sure knew what He was doing when He created food to be pleasing to the eye.  More importantly, He packed the rainbow of foods full of antioxidants, vitamins and minerals, everything we need to live naturally and stay healthy.  

Strawberry Spinach Salad (THM S)

¼ cup chopped red onion
½ medium cucumber, chopped
½ lb quartered or sliced strawberries
¼ cup slivered almonds
6oz bag baby spinach
Crumbled feta cheese
1 lemon
2 tbsp vinegar
6 doonks stevia (a doonk is 1/32 scoop that comes with stevia)
1 tbsp olive oil
1 tsp poppy seeds
In a small bowl, zest lemon (about ½ tsp) and squeeze 2 tbsp lemon juice, add remaining dressing ingredients and whisk well.  Put spinach in a bowl with onion, cucumber, strawberries, and almonds.  Sprinkle with feta cheese.  Drizzle with dressing and toss.  If serving this as a side salad, you will probably be able to get about ten servings out of it.  However, I wouldn’t be surprised if it didn’t go that far.  It is beautiful and delicious.  I know I can’t eat it as a side.  I usually put a huge pile on my plate!  Enjoy!

  2. Thanks! It is one of my favorites. I'll be praying for you on your THM journey. I have been on THM since October 2013. I am a turtle when it comes to weight loss. I have lost 40 pounds and have about 10 more I'd like to lose, but more importantly I have gained energy and health, been able to go off of medication for supraventricular tachycardia. Unfortunately, right now I think I'm having some adrenal fatigue which is affecting my hormone levels so I have stalled with the weight loss. If I can ever help you in any way, let me know. 🙂
